Lemon Filling

1 T grated lemon rind
2 C Imperial Sugar Extra Fine Granulated Sugar or Dixie Crystals Extra Fine Granulated Sugar
4 eggs, slightly beaten
1/2 C lemon juice
2 T butter

Mix ingredients thoroughly.  Cook over low flame or in double boiler, stirring constantly until mixture is clear and as thick as jelly.  Cool slightly before spreading on cake.
