Ingredients
- 2 cups flour
- ½ cup granulated Imperial Sugar
- ½ cup chopped pecans
- 1½ teaspoons pumpkin pie spice
- 1 teaspoon baking powder
- ½ teaspoon salt
- 2 eggs, slightly beaten
- ¾ cup canned pumpkin
- ½ cup butter or margarine, melted
- ¼ cup sour cream
- 1, 3-ounce package cream cheese, cut into 12 cubes
- Sugar and cinnamon
Instructions
- In large bowl, mix flour, sugar, pecans, pumpkin pie spice, baking powder and salt. In small bowl mix eggs, pumpkin, butter and sour cream. Add to flour mixture. Stir just until blended.
- Grease muffin tins or use paper muffin cups. Fill cups 1/3 full, place a cream cheese cube in center of each, add more batter to fill pans 2/3 full. Sprinkle top with sugar and cinnamon.
- Bake in preheated 400 degree oven for 15–25 minutes, until toothpick inserted in center comes out clean.
